Preparation Time: 20 minutes
Cooking Time: 2–3 hours
Servings: 6
Ingredients
- 2 lb (900 g) beef shank or beef soup bones with meat
- 3 carrots, peeled
- 2 parsnips, peeled
- 1 small piece of celery root
- 1 small onion, peeled
- 2 cloves garlic
- 1 small wedge of cabbage
- 1 yellow bell pepper
- 1 bunch fresh parsley
- 2 bay leaves
- 1 teaspoon whole black peppercorns
- Salt, to taste
- 10–12 cups (2.5–3 liters) cold water
Instructions
- Prepare the beef: Place the beef and soup bones in a large stockpot. Add the cold water and slowly bring to a gentle simmer.
- Remove the foam: Skim off any foam that rises to the surface to keep the broth clear.
- Add the aromatics: Add the onion, garlic, bay leaves, peppercorns, and salt.
- Cook slowly: Simmer gently for about 1½ hours, keeping the pot partially covered.
- Add the vegetables: Add the carrots, parsnips, celery root, bell pepper, and cabbage. Continue simmering for another 45–60 minutes, or until the beef and vegetables are tender.
- Add fresh herbs: Add the parsley during the final 10 minutes of cooking.
- Strain and serve: Remove the meat and vegetables carefully. Strain the broth if desired, then serve hot with the beef and vegetables.
Serving Suggestions
Serve this delicious Hungarian soup with fresh crusty bread or homemade noodles. Garnish with chopped parsley for extra freshness.
Tips for the Best Flavor
- Keep the soup at a gentle simmer rather than a rolling boil.
- Use beef bones for a richer, more flavorful broth.
- Avoid cutting the vegetables too small so they hold their shape.
